Malt grading

Have you noticed the tough grading of malting barley? The maltsters don’t want any plump or skinny kernels in the malt sample. Now, I believe that the beer would taste just as good with a few plump and a few thin kernels in the malt.

Are we to grow the barley to certain specifications? Neither plump nor thin. Nature does not do it. When moisture is plentiful, you get more plump kernels. Also, when it is too dry, you get more thin kernels.

Shouldn’t we grade the maltsters? Get rid of the bad ones. Years ago, beer was beer. And there were no complaints!
