Beef centre of excellence expected to open Jan. 31

The Canadian Beef Centre of Excellence should be open for business by Jan. 31, 2015.

The centre is under construction at the Canada Beef Inc. office in Calgary, where there will be a fully equipped commercial kitchen, approved meat cutting areas and broadcast capacity.

“As an industry, we need a showcase,” said Marty Carpenter, director of global beef development and the centre of excellence for Canada Beef.

The idea is to introduce Canadian beef to the world as well as centring promotion, education and research and development in one place, he said at the Alberta Beef Producers annual meeting in Calgary Dec. 1-3.

Cooking demonstrations can be recorded and put on YouTube. It may show viewers how to carve a beef roast or how to add beef to the family meal in new and interesting ways.

A formal dining area can host domestic as well as international clients interested in using Canadian products.

The centre will also be able to develop specific menus and train chefs who may not be familiar with new cuts of beef.
