Defining what makes a meal Canadian can be difficult.
Canada is such a multicultural country with a variety of ethnic groups that it can be hard to narrow it down, says Patrick Hauta, whose company is running a contest in search of the Great Canadian Recipe.
“It opens up many opportunities,” said Hauta.
The BontaniCa restaurants, found in five hotels in Regina, Saskatoon, Lethbridge, Red Deer, Halifax and soon Calgary, are searching for recipes that typify Canada.
Chefs will take the winning, tested recipes and incorporate them into new menus, said Hauta.
“We want to provide a comfort-driven, home-away-from-home dining experience…. We want the menu to reflect the guests.”

March 31 is the deadline to receive the recipes, which can be for an appetizer, a dessert or a main course. Recipes can be original or adapted.
