In the Feb. 27, 1997 issue, I introduced the book Inspiration For Living by Bethe Mende Conny, published by Peter Pauper Press, Inc., White Plains, New York. As the months have passed many readers have asked me where they can get their own copy. I contacted Coles Book Stores and the book can be obtained at any of their branches.
Light-hearted quotations help to relieve stress, lift your spirits and give direction. Here are some examples of the contents:

Cabbage rolls, egg whites
Dear TEAM: Would you have a favorite recipe for cabbage rolls? Also, why do some beaten egg whites call for cream of tartar? – B.J., Prespatau, B.C.
Dear B.J.: As soon as I read your letter I thought of baba, as we always looked forward to a taste of her cabbage rolls or holubtsi. My husband’s Baba and dido came to Canada from the Ukraine in the 1930s. They established a new life here, but there was one thing that they never got used to … holubtsi with meat. I am providing a traditional meatless recipe, as well as a variety that contains meat. The choice is yours, they are both tasty.
Meatless holubtsi (cabbage rolls)
4 cups water 1 L
2 cups rice 500 mL
1 medium onion, 1
chopped
1 teaspoon salt 5 mL
1Ú2 teaspoon pepper 2 mL
4 tablespoons oil 60 mL
Cook rice in water according to package instructions, slightly underdone. SautŽ the onion in the oil, until transparent. Add the onion to the rice mixture. Stir. Add salt and pepper to taste. Remove from heat. Cool. The mixture is now ready to place into cabbage leaves.
To prepare cabbage:
1 medium-sized 1
cabbage
boiling water
1 tablespoon 15 mL
vinegar
Remove core from cabbage. Place cabbage in boiling water to cover. Simmer long enough for the leaves to become limp and easily removed from the head itself. Do not overcook. Remove the leaves from the water, remove the hard centre part of the leaf. The cabbage leaves are now ready to use.
Place a spoonful of rice mixture on the leaf. Roll tightly, closing the ends as you roll each cabbage roll.
Place each cabbage roll in a two quart (two L) casserole with:
3Ú4 cup tomato 175 mL
juice or
3Ú4 -1 cup tomato 175-250 mL
soup, diluted with 1Ú2
cup (125 mL) water
When baking, you may pour tomato juice, stewed tomatoes or tomato soup over the cabbage rolls. Bake at 350 F (180 C) for 11Ú2-2 hours. Yield: 20-30 cabbage rolls.

Cabbage roll #2
1Ú2 pound ground 250 g
beef
1 teaspoon 5 mL
uncooked rice
1Ú2 onion, diced 1Ú2
dash garlic
powder
dash salt
dash black pepper
dash white pepper
dash paprika
6 large cabbage 6
leaves
3Ú4 cup tomato juice 175 mL
Heat oven to 375 F (190 C.)
Combine the first eight ingredients in a bowl. Mix well and set aside.
Boil some water in a pot. Cook cabbage leaves for three minutes in the boiling water. Remove the leaves and let them cool.
Divide the beef filling into six portions. Take each cabbage leaf and roll a portion of the beef filling in it. Pinch ends and put the rolls in a casserole dish. Dump the tomato juice over the rolls, cover and bake in the oven for 30-40 minutes. Serves 1-2.
Tip: line the casserole dish with small cabbage leaves to avoid burning the rolls.
To address your second question, one adds cream of tartar to egg white foams for extra stability. You may add one teaspoon (five mL) cream of tartar for every cup (250 mL) of whites.
Food combining
I would like to respond to a letter that I received from L.E., Meota, Sask. She wrote me with concerns about the theory of food combining and asked for my feelings on the subject.
I have heard a lot about this way of eating, but it is hard for me to express my opinion as I do not have a strong background in the nutrition/dietetics area. The book that I was referring to was Fit for Life II – Living Health, not Fit for Life (the diet plan). The book caught my attention due to its promotion of a healthy lifestyle, mentioning water, air, sleep, sunshine, exercise, relationships, as well as diet.
I personally do not agree with all the statements made in the book. My suggestion would be to contact your local nutritionist and ask for some information on the topic.
Rhubarb removes stains
Dear TEAM: Recently a reader wrote in about removing yellow water stains from dishes. Well, I tried this. The boiling rhubarb and water worked wonders. I had been ready to throw my ugly rusty dishes away.
I also had a white T-shirt that had turned tan, so I thought I’d throw this in the canner, rhubarb and all. What do you know? My Anne Murray souvenir T-shirt turned white again. I no longer am worried about the rust in my water. A big thank you to that wonderful person for sending in the solution to yellow dishes.
By the way, would someone have the words to this song: “When it’s harvest-time my sweet Angeline, we will wander through the fields of rain. Like a meadowlark, just before it’s dark, we will harmonize love’s sweet refrain.” I would also like the words to the song Annabelle. – J.C., Prince George, B.C.
